Use Gypsum (Calcium Sulfate) to adjust your water chemistry. This product corrects mineral deficiencies in water used to brew beer. It’s ideal for brewers who use distilled or RO water, because it adds permanent hardness (calcium ions) to soft brewing water. This product helps establish a proper pH and aids kettle protein coagulation.

Gypsum (Calcium Sulfate) is considered an essential component of water for brewing pale and IPA styles because it enhances hop perception, flavor and bitterness. The acidity in this product creates a slight perceived dryness that helps hop character shine. We highly recommend using it to brew your best NEIPA, IPA or paleale.

Gypsum (Calcium Sulfate) is ideal for:

  • Brewing hop-forward beers
  • Brewers with soft water or who use distilled or RO water

Recommended dosage: add 1 teaspoon per 5 gallon batch (or 1 gram per gallon) to the boil. NOTE: If sulfates are not desired in your beer, use Calcium Chloride as an alternative to this product.
