Maintaining the proper fermentation temperature for each yeast strain is crucial its health. Matching a yeast's ideal range to your environment (or your ability to control temp) is key to getting clean, consistent results.

Description

Looking for extra yeast for winemaking? Try Red Star Premier Rouge Yeast, one of the best strains for fermenting red wines. It promotes fruity flavors and complex aromas, especially with Cabernets.

Thanks to its high intensity dark fruit aromas, this yeast can enhance lighter red varietals or less robust grapes. This strain is also well suited for wines aged in oak barrels.

Temperature control is recommended with this strain, which is best fermented between 64 - 86ºF. This yeast strain can ferment wines of up to 15% alcohol tolerance.  

Premier Rouge yeast is an excellent choice for Cabernet Sauvignon, Merlot, Cab Franc, or Zinfandel.

This packet of active dry yeast ferments up to 5 gallons of wine. Red Star recommends rehydrating yeast before pitching.
