SafBrew DW 17 Yeast is ideal for creating complex, dry beers with fruity, woody, and subtle sour notes, like saisons or wild ales. It’s an all in one solution consisting of yeast and enzymes that work together to ferment very high density worts to produce high alcohol content.

SafBrew DW‑17 Yeast exhibits high attenuation (98-102%), meaning the yeast and enzymes consume 98-102% of the sugars in the wort to produce a very dry finish. The enzymes in DW 17 Yeast convert non-fermentable, more complex sugars into fermentable sugars. Those fermentable sugars are consumed by the yeast to create CO2, alcohol & aromatic compounds.  

This solution thrives in a fermentation temperature range between 68 - 89.6ºF.
