This yeast hails from Berlin, and is used by many European commercial breweries. It's a great yeast for making American or European lagers, Czech Pilsners or Pre-Prohibition Lagers.
This strain thrives in a fermentation temperature range of 50-57°F. Within this range, it will develop its best lager notes, producing fruity & ester-y notes. This flexible yeast can also ferment with a warmer range of 61-68°F if you don't have the ability to maintain true lager temperatures.
SafLager S-23 Berlin Lager Dry Yeast flocculates well, meaning it clumps & falls out of suspension for better sediment separation. It also has good attenuation for a clean, dry finish.
