Wai-iti is a New Zealand hop variety developed by New Zealand Plant and Food Research and released in 2011. It is a granddaughter of the USDA-developed Liberty and a triploid hop derived from one-third Hallertau Mittelfrüh heritage. It was specifically selected for its low alpha acid content and high oil concentration.

Brewers often describe Wai-iti hops as producing bright peach, apricot, and lime flavors with freshly squeezed citrus character. Citrus notes that are prominent in the raw hops step back in the finished beer to reveal a blend of stone fruits such as fresh peach and ripe apricot. Low cohumulone and high farnesene levels create a rounded, clean bitterness.

Wai-iti performs especially well in late boil additions and dry hopping where its high oil content delivers a distinctive burst of stone fruit and citrus aroma, even at its low alpha acid content.
