Makes 5 gallons (approximately 48–54 bottles) of Bone Dry Irish Stout
Ready to drink in about 4 weeks
Dry Irish Stout with roasted malt character
Ingredient-only 5-gallon beer recipe kit
Bone dry, exactly as advertised
There is no sugar in this recipe, so the dry finish the name promises comes entirely from the yeast. US-05 attenuates further than anything else here and stays completely neutral while it does it, which leaves the Chocolate and Black Malt roast sharp and unsweetened.
Ferment at 64-79°F
Attenuation 78-82%
Flocculation Medium
Clean and neutral
Roast with a little fruit behind it
1084 was made for dark wort and it shows, working cleanly through a heavily roasted grain bill and adding a subtle fruitiness underneath. Keep it cool and that fruit stays restrained. Let it climb and it comes forward against the roast.
Ferment at 62-72°F
Attenuation 71-75%
Flocculation Medium
Built for dark beer
The roundest body under the roast
This one comes out of one of the oldest stout breweries in the world. It finishes fullest of the four, giving a rounder body beneath the roast while keeping a dry edge on the end. Its temperature window is narrow, so hold it steady.
Ferment at 65-68°F
Attenuation 69-74%
Flocculation Medium-High
Dry finish, roast forward
Dry and neutral, British accent
1098 ferments dry and crisp to a clean neutral finish, so malt and hops lead. Unlike a lot of British strains it works properly at the cool end of its range instead of stalling there, which makes it forgiving in an unheated room.
Ferment at 64-72°F
Attenuation 73-75%
Flocculation Medium
Dry, crisp, neutral

Flavor Profile & Beer Style
The Bone Dry Irish Stout is a classic dry stout brewed with a dark blend of roasted malts and mild English hops. Flavors of coffee, dark chocolate, and light toffee lead the profile, balanced by restrained bitterness and a clean finish.
With a medium mouthfeel and jet-black appearance, this stout stays true to traditional Irish stout character while remaining smooth and approachable.

This 5-gallon recipe kit includes all the ingredients needed to brew Bone Dry Irish Stout at home:
6.25 lb traditional dark dry malt extract
Golding hops (bittering)
Steeping grains
Grain steeping bag

Note: Brewing equipment is not included. This kit is designed for brewers who already own a 5-gallon brewing setup.
How the Brewing Process Works
Brewing your Bone Dry Irish Stout follows a straightforward stout brewing process designed to highlight roasted malt flavor:
Brew: Steep specialty grains, boil the wort, and add hops
Ferment: Ferment with ale yeast until complete and stable
Condition: Allow the beer to condition for smoothness and clarity
Enjoy: Ready to drink in about 4 weeks
Maintaining proper fermentation temperature will help preserve clean roast character without harsh bitterness.
New to Liquid Yeast?
Liquid yeast can deliver excellent fermentation performance and a wider range of strain options, but it’s a living, perishable product that requires a little extra care.
Liquid yeast may arrive warm. Ice packs help reduce heat exposure but do not guarantee cold arrival.
Refrigerate it when received and plan to brew as soon as possible.
We recommend adding an insulated mailer + ice pack to liquid yeast orders.
During May–September, dry yeast is strongly recommended due to higher shipping temperatures.
Liquid yeast is final sale and cannot be replaced due to heat exposure during transit.
Drinkers who prefer roasted, dry beer with a smooth finish
Because it’s brewed in larger volume, this kit is well suited for sharing, kegging, or keeping a dependable stout on hand year-round.
