Makes 5 gallons of Czech Pilsner
All-grain recipe designed for brewers with an all-grain system
Ready to drink in about 4 weeks
Classic Bohemian pilsner style with soft malt character and noble Saaz hops
Clean, dry and dependable
34/70 finishes drier than anything else here and throws very few esters, which is precisely what a beer built on Saaz needs from its yeast. It is also happy at the warm end of lager temperatures, so a cool basement will hold it.
Ferment at 54-64°F
Attenuation 80-84%
Flocculation High
The classic dry lager
Softer, with the Vienna showing
Urkel is an actual Czech lager strain and it tastes like one: balanced and soft, with more malt in the glass than 34/70 leaves, so the Vienna malt comes through. Sulfur during fermentation is normal for this strain and clears as the beer conditions.
Ferment at 52-58°F
Attenuation 71-75%
Flocculation Medium
Balanced, soft, Czech
Dry and malty at the same time
2278 is the classic Bohemian strain, and it pulls off the trick the style is named for: a malty profile that still drinks dry. It throws some sulfur while it works, and fermenting at the warmer end of its range keeps that in check.
Ferment at 50-58°F
Attenuation 70-74%
Flocculation Medium-High
Dry and malty
Hop character, lifted
Saaz across three additions is the entire personality of this beer, and WLP830 brings hop character forward rather than sitting on it. It also ferments exceptionally clean. It wants a genuinely cold fermentation, so this is the choice when you have real temperature control.
Ferment at 50-55°F
Attenuation 74-79%
Flocculation Medium
Crisp, clean, classic

Flavor Profile & Beer Style
Czech Pilsner is a balanced, golden lager defined by soft malt character and expressive Saaz hop aroma. Briess Pilsen Malt provides light bready notes, while Weyermann Vienna and Acidulated malts add subtle depth and a smooth finish. Noble Saaz hops are used throughout the boil for gentle bitterness and herbal, spicy hop character. The finish is crisp, clean, and refreshing with brilliant clarity. This is a refined, traditional Bohemian pilsner with balance and elegance.

How the Brewing Process Works
Brewing your Czech Pilsner is a traditional lager process designed to highlight clean malt flavor and classic hop balance:
Mash: Convert grain starches into fermentable sugars with a light, dry mash profile for a crisp finish.
Sparge: Rinse the grains to collect sweet wort.
Boil: Add noble Saaz hops at multiple intervals for layered bittering, flavor, and aroma.
Ferment: Allow the beer to cold-condition to refine clarity and flavor
Enjoy: Ready to drink in about 4 weeks from brew day to glass.
This all-grain Czech Pilsner delivers the refined balance and brilliant clarity of a traditional Bohemian lager.
New to Liquid Yeast?
Liquid yeast can deliver excellent fermentation performance and a wider range of strain options, but it’s a living, perishable product that requires a little extra care.
Liquid yeast may arrive warm. Ice packs help reduce heat exposure but do not guarantee cold arrival.
Refrigerate it when received and plan to brew as soon as possible.
We recommend adding an insulated mailer + ice pack to liquid yeast orders.
During May–September, dry yeast is strongly recommended due to higher shipping temperatures.
Liquid yeast is final sale and cannot be replaced due to heat exposure during transit.
