This Oak Aged IPA 5 Gallon beer recipe kit helps you brew a traditionally hopped IPA with firm bitterness and subtle oak character that is ready to drink in about five to six weeks.
Makes 5 gallons (approximately 48–54 bottles) of Oak Aged IPA
Ready to drink in about 5–6 weeks
Traditional India Pale Ale with oak-aged character
Includes toasted oak chips for barrel-inspired flavor
Driest, and the oak stays clean
US-05 finishes further than any other option here, so the toasted oak comes through as oak rather than as sweetness. On a strong IPA built around English hops that dryness keeps the whole thing in proportion. No temperature drama over a long fermentation.
Ferment at 64-79°F
Attenuation 78-82%
Flocculation Medium
Clean and neutral
Dry and British, hops lead
1098 finishes dry and clean and lets the malt and the English hops lead, which suits Cascade, Willamette and Goldings very well. It has the tightest attenuation band of Wyeast's British strains, so you know what you are getting. Comfortable in a cool room.
Ferment at 64-72°F
Attenuation 73-75%
Flocculation Medium
Dry, crisp, neutral
Dry, with an English accent
This one manages both at once: real English yeast character, and enough attenuation that the finish still tastes dry rather than sweet. It ferments as cleanly and predictably as a good American strain. A rare thing: English character without the sweetness that usually comes with it.
Ferment at 65-70°F
Attenuation 70-80%
Flocculation Medium-High
English character, dry finish
The oak takes the lead
Flagship contributes so little of its own that the toasted oak and the English hops end up running the beer between them. It shrugs off a strong gravity without effort and holds steady across a long fermentation. Mid range flocculation, so it takes its time clearing.
Ferment at 60-72°F
Attenuation 73-77%
Flocculation Low-Medium
Extremely clean

Flavor Profile & Beer Style
The Oak Aged IPA is inspired by traditional English-style India Pale Ales, delivering a bold hop bite balanced by subtle oak character. Toasted oak chips lend light woody and vanilla notes, adding depth without overpowering the beer.
Classic hop varieties provide firm bitterness and earthy, floral aromatics, while a clean malt backbone keeps the beer structured and drinkable.

How the Brewing Process Works
Brewing your Oak Aged IPA follows a traditional IPA brewing process with an added oak aging step:
Brew: Steep specialty grains, boil the wort, and add hops according to the recipe
Ferment: Ferment with American ale yeast until fermentation is complete
Optional Step: Add toasted oak chips during fermentation as instructed
Enjoy: Ready to drink in about 5–6 weeks
Allowing the oak chips to steep during fermentation adds subtle barrel character without overpowering the hop profile.
New to Liquid Yeast?
Liquid yeast can deliver excellent fermentation performance and a wider range of strain options, but it’s a living, perishable product that requires a little extra care.
Liquid yeast may arrive warm. Ice packs help reduce heat exposure but do not guarantee cold arrival.
Refrigerate it when received and plan to brew as soon as possible.
We recommend adding an insulated mailer + ice pack to liquid yeast orders.
During May–September, dry yeast is strongly recommended due to higher shipping temperatures.
Liquid yeast is final sale and cannot be replaced due to heat exposure during transit.
Drinkers who prefer firm bitterness with subtle wood character
Because it’s brewed in larger volume, this kit is well suited for sharing, aging slightly longer, or enjoying how oak character evolves over time.
