Makes 5 gallons of Oktoberfest-style ale
All-grain recipe designed for brewers with an all-grain system
Ready to drink in about 4 weeks
Traditional Märzen style with rich, malty character and a clean finish
Clean and dry, the simple route
This recipe builds a lager style as an ale, and US-05 is the most straightforward way to do it. It finishes driest of the five and stays neutral, so the Munich and caramel malt define the beer. Ferments happily at room temperature with no special handling.
Ferment at 64-79°F
Attenuation 78-82%
Flocculation Medium
Clean and neutral
Fullest and maltiest
2112 holds genuine lager character well up into cool room temperatures, so you get a true Oktoberfest profile without a fermentation fridge. It finishes fullest of the five, leaving the Munich and caramel malt rich on the palate. High flocculation drops it brilliantly clear.
Ferment at 58-68°F
Attenuation 67-71%
Flocculation High
Malty and brilliantly clear
Lager finish, a whisper of fruit
The Cologne strain, giving a light ale fruitiness over a clean lager-like base, and it works across a generous temperature band. It splits the difference between the ale and lager options here. Powdery and slow to settle, so it needs cold conditioning to go bright.
Ferment at 56-70°F
Attenuation 73-77%
Flocculation Low
Ale fruit, lager finish
Rich, malty, properly Bavarian
A genuine Bavarian lager strain used by German breweries for rich, full bodied malty beer, which is precisely what this grain bill is reaching for. It needs real cold and a thorough diacetyl rest once fermentation finishes.
Ferment at 46-58°F
Attenuation 73-77%
Flocculation Medium-High
Rich, full, malty
Lager character without the lager temperature
Pitch Lutra warm, near the top of its range, and it ferments clean and fast enough to give you a crisp Oktoberfest in days rather than weeks, with none of the esters or phenolics a warm ferment usually brings. The quickest turnaround here by a wide margin.
Ferment at 54-95°F
Attenuation 74-80%
Flocculation Medium-High
Clean, fast, no fridge
✅ Beginner-friendly with step-by-step brewing support
Flavor Profile & Beer Style
Oktoberfest Ale is a malt-forward, Munich-style Märzen with rich caramel, toasted bread, and biscuit flavors. Briess Goldpils Vienna malt provides the smooth, bready backbone, while Caramel 20L, Caramel 60L, and Aromatic Munich 20L malts add layers of toffee and toasty depth. German Mt. Hood and Perle hops deliver clean, balanced bitterness without overpowering the malt. The finish is smooth, clean, and medium-bodied with an amber-copper color. This is a classic festival beer built for sipping and celebrating.
What’s Included in the Recipe Kit
This 5-gallon recipe kit includes all the ingredients needed to brew Oktoberfest Ale at home:
Note: You will need a 5-gallon all-grain brewing system. Brewing equipment is not included.
How the Brewing Process Works
Brewing your Oktoberfest Ale follows a traditional ale process with optional cold aging to enhance malt smoothness:
Mash: Convert grain starches into fermentable sugars with a balanced mash profile for medium body.
Sparge: Rinse the grains to collect sweet wort.
Boil: Add Mt. Hood and Perle hops for clean, balanced bitterness.
Ferment: Ferment with German ale yeast until clean and fully attenuated for a smooth, malty finish.
Enjoy: Ready to drink in about 4 weeks from brew day to glass.
This all-grain Oktoberfest delivers the rich, malty depth of a traditional Märzen with a smooth, clean finish worthy of any festival celebration.
New to Liquid Yeast?
Liquid yeast can deliver excellent fermentation performance and a wider range of strain options, but it’s a living, perishable product that requires a little extra care.
Liquid yeast may arrive warm. Ice packs help reduce heat exposure but do not guarantee cold arrival.
Refrigerate it when received and plan to brew as soon as possible.
We recommend adding an insulated mailer + ice pack to liquid yeast orders.
During May–September, dry yeast is strongly recommended due to higher shipping temperatures.
Liquid yeast is final sale and cannot be replaced due to heat exposure during transit.

What makes this different from a regular amber ale?
An Oktoberfest/Märzen puts malt character front and center, with rich Vienna and Munich malts providing a toasty, bready backbone that's more complex than a typical amber ale. The German hop varieties provide clean bitterness without the fruity or floral hop character common in American ambers. The result is a smooth, malt-focused beer with a clean finish.
Is this beer sweet?
This Oktoberfest has a pleasant malt sweetness from the Vienna and caramel malts, but it's balanced by moderate hop bitterness and a clean, dry finish. The overall impression is smooth and malty rather than sweet, with layers of caramel and toasted bread that are rich but never cloying.
How long does this beer take to brew?
Brew day takes about 4-5 hours. After that, fermentation takes around 2 weeks. Most brewers have this beer ready to drink in about 4 weeks from brew day to glass.
Is this kit beginner-friendly?
This all-grain beer recipe kit is intended for advanced brewers with all-grain brewing equipment. If you're new to brewing, we recommend starting with one of our extract recipe kits, which are designed to be beginner-friendly and require less equipment.
Can I brew this year round?
Yes! This Oktoberfest recipe kit is available year-round and can be brewed in any season. Its rich, malty character makes it a natural fit for fall celebrations, but it's a satisfying, smooth beer that's enjoyable any time of year.
