✅ Advanced all-grain brewing with clear step-by-step guidance

Alligator Amber Ale is an American amber ale — the style that bridges pale and brown ales, pairing a caramel malt backbone with clean American hop character. Built all-grain on a Briess 2-Row base, a full pound of Caramel 60L layers caramel, toffee, and light dried-fruit sweetness for a medium body, while a touch of Chocolate malt deepens the color to rich amber and adds subtle cocoa without any roast bite. Cascade provides smooth, moderate bittering, Simcoe brings pine and citrus mid-boil, and a Citra and Simcoe flameout finishes with bright grapefruit and tropical aroma — malty and approachable up front, clean and moderately dry at ~6.2% ABV.

Brewing your Alligator Amber Ale follows a classic American amber ale all-grain process:

Mash: Convert grain starches into fermentable sugars with a standard single-infusion mash
Sparge: Rinse the grains to collect sweet wort
Boil: Add Cascade hops for bittering, then Simcoe and Citra at later additions for citrus aroma
Ferment: Ferment with American ale yeast until clean and fully attenuated
Enjoy: Ready to drink in about 4 weeks

This process produces a clean, hop-forward amber ale with bright citrus aroma and rich caramel malt character.

Liquid yeast can deliver excellent fermentation performance and a wider range of strain options, but it’s a living, perishable product that requires a little extra care.

Liquid yeast may arrive warm. Ice packs help reduce heat exposure but do not guarantee cold arrival.
Refrigerate it when received and plan to brew as soon as possible.
We recommend adding an insulated mailer + ice pack to liquid yeast orders.
During May–September, dry yeast is strongly recommended due to higher shipping temperatures.
Liquid yeast is final sale and cannot be replaced due to heat exposure during transit.

Frequently Asked Questions

Does this kit include brewing equipment?

No. This is an ingredient-only recipe kit designed for brewers who already own a 5-gallon all-grain brewing system — mash tun, kettle, fermenter, and standard all-grain gear.

Is Alligator Amber more malty or hoppy?

It's balanced with a slight hop-forward lean for an amber ale. Caramel 60 and Chocolate malt deliver caramel sweetness and cocoa depth, while Cascade, Simcoe, and Citra hops add bright citrus aroma and flavor that make this amber ale stand out.

Is this beer sweet?

No. The malt profile is rich but the finish is clean and dry. The citrus hop character keeps the beer refreshing and balanced rather than sweet.

How long does it take to brew?

Brew day takes about 4–5 hours for mashing, sparging, boiling, and cooling. After about 2 weeks of fermentation and 2 weeks of bottle conditioning, Alligator Amber Ale is ready to drink in about 4 weeks total.

Is this recipe beginner-friendly?

This kit is intended for experienced brewers with all-grain equipment. If you're newer to homebrewing, we recommend starting with our Alligator Amber Ale extract recipe kit, which uses a simpler steep-and-boil process.

Can I brew this year-round?

Yes. Alligator Amber Ale is available year-round and pairs well with grilled foods, backyard cookouts, and outdoor gatherings any time of year.
