Added some homemade Candi sugar throughout the fermentation and "dry hopped" with some pecans... Tastes like a dream.

A beer after a hot day

This was an easy enough beer to brew, followed the steps, kept it all santised and clean & two weeks later the top popped off the bottle like a champagne cork.. delicious if perhaps a little on the sweet side. Being a brewing newbie.. was curious to know if the carbonation period was lengthened whether it would reduce the explosive pop? Or would this have the opposite effect? Should I regfrigerate for longer than 24hrs before drinking?

Sweet Beer

I am not sure if this is typical of extract type brewing but realized I may not have waited long enough for the wort to ferment. Just past two weeks I bottled and now I have this very sweet ale that has little carbonation. The kit was easy to use and I followed directions but my previous batch was all grain. Now I am on my second batch of an extract brewing recipe kit purchased from a local shop and seems to be taking longer to ferment as well. So I’ll wait.
