Belgian Golden Ale is a masterclass in brewing restraint — a style that conceals tremendous strength behind a crystal-clear golden pour and a light, airy body. Devil in Disguise takes this from grain to glass, giving all-grain brewers full control over the mash for the most authentic expression of the style.

Innocently pale with a light, airy body. Devilishly strong at 8.8% ABV.

Briess Pilsen malt forms the clean, pale base that keeps the beer brilliantly golden. Dingemans Biscuit malt adds warm toasted bread and nutty depth, while aromatic Munich malt contributes soft malt complexity without darkening the color. Dextrose — stirred in at flame-out — uses the classic Belgian technique to build strength without adding color. Styrian Goldings deliver refined earthy and herbal bitterness across two additions, Saaz adds delicate spicy and floral character at the finish, and Belgian ale yeast delivers the expressive fruity esters and dry attenuation that give this style its legendary drinkability.

This 5-gallon recipe kit includes all the ingredients needed to brew Devil in Disguise Belgian Golden Ale at home:

Briess Pilsen Base Malts
Briess Aromatic Munich 20L
Dingemans Biscuit Malt
Styrian Goldings Hops (Bittering)
Styrian Goldings Hops (Late Bittering)
Saaz Hops (Aroma)
Your choice of yeast (choose from dry, liquid or none if you have your own)
Dextrose
Step-by-step brewing instructions

Note: You will need a 5-gallon all-grain brewing system. Brewing equipment is not included.

Brewing Devil in Disguise from all-grain follows a classic Belgian golden ale process — clean technique and patient conditioning are key:

Mash: Mash at a lower temperature (150°F dry mash) for a highly fermentable wort — essential for achieving the dry, crisp finish and full attenuation that define the style
Sparge: Rinse the grains to collect the full wort
Boil: Add Styrian Goldings at 60 and 30 minutes for layered, refined bitterness; add Saaz at 5 minutes for delicate floral and herbal aroma
Finish: Stir dextrose into the wort at the end of the boil until fully dissolved
Ferment: Ferment with your selected Belgian ale yeast for fruity esters and a dry, fully attenuated finish
Bottle: Bottle condition for the rich, dense head characteristic of Belgian golden ales
Enjoy: Ready to drink in about 6 weeks

Liquid yeast can deliver excellent fermentation performance and a wider range of strain options, but it’s a living, perishable product that requires a little extra care.

Liquid yeast may arrive warm. Ice packs help reduce heat exposure but do not guarantee cold arrival.
Refrigerate it when received and plan to brew as soon as possible.
We recommend adding an insulated mailer + ice pack to liquid yeast orders.
During May–September, dry yeast is strongly recommended due to higher shipping temperatures.
Liquid yeast is final sale and cannot be replaced due to heat exposure during transit.

Frequently Asked Questions

Does this kit include brewing equipment?

No. This is an ingredient-only 5-gallon all-grain recipe kit. Brewing equipment is not included, and this kit is designed for brewers who already own a 5-gallon all-grain brewing setup.

What does all-grain brewing mean for this style?

All-grain brewing uses whole malted grains instead of malt extract, giving you full control over the mash and a deeper, more complex flavor. For a Belgian Golden Ale, this means richer malt character from Briess Pilsen, Dingemans Biscuit, and Munich malts, with a highly fermentable wort that drives the dry, crisp finish.

Is this beer sweet?

No. Belgian Golden Ale is a dry, effervescent style. The all-grain mash is designed for maximum fermentability, and the dextrose addition ferments out completely. The result is a bone-dry, clean finish at 8.8% ABV.

How long does it take to brew and drink?

Brew day takes about 4–5 hours. After that, fermentation takes around two weeks followed by four weeks of bottle conditioning. Most brewers have their first pour ready in about 6 weeks total.

Is this recipe kit beginner friendly?

This all-grain kit is intended for brewers with all-grain experience. If you are new to homebrewing, we recommend starting with our extract recipe kit or 1-gallon brew kit.

Is this recipe available year-round?
