Tart, refreshing sour wheat beer with kettle-souring technique
Clean, and the tartness stays sharp
The wort is already sour before any yeast goes near it, thanks to the kettle souring step. US-05 finishes drier than any other fermenting option here and contributes nothing of its own, so the acidity and whatever fruit you choose come through bright and defined.
Ferment at 64-79°F
Attenuation 78-82%
Flocculation Medium
Clean and neutral
Your fruit, front and center
You choose and supply the fruit for this one, so a yeast that contributes nothing is doing you a favor. Flagship leaves the tartness and the fruit to define the beer between them, with a comfortable body underneath. It clears slowly on its own.
Ferment at 60-72°F
Attenuation 73-77%
Flocculation Low-Medium
Extremely clean
Soft and rounded against the tartness
1056 finishes fuller than US-05, which sits comfortably alongside the acidity from the kettle sour. It stays clean and contributes very little of its own, keeping whatever fruit you choose firmly in front. Forgiving on temperature, and a slow settler.
Ferment at 60-72°F
Attenuation 73-77%
Flocculation Low-Medium
Clean and versatile
Hazy, soft and fruit forward
Juice pushes fruit aroma to the front and keeps the beer soft and cloudy, which suits a fruited sour far better than a lean finish would. The fuller body sits comfortably alongside the acidity. It is a hungry, energetic fermenter.
Ferment at 64-74°F
Attenuation 72-76%
Flocculation Medium
Juicy and hazy
This is where the tartness comes from
OYL-605 is the Lactobacillus culture that sours the wort, and it goes into the kettle before the boil rather than into the fermenter. It makes no meaningful alcohol, so you pair it with one of the yeasts above to ferment the beer itself. It is extremely hop sensitive.
Ferment at 68-95°F
Attenuation n/a
Flocculation Not applicable
Souring culture, not a yeast

Flavor Profile & Beer Style
The Florida Weisse is a tart, fruit-forward sour wheat beer using kettle souring for bright, refreshing acidity. How the Brewing Process Works
Brewing your Florida Weisse follows a kettle-soured wheat beer brewing process:
Mash: Convert grain starches into fermentable sugars for a light, tart wheat base.
Kettle Sour: Pitch WildBrew Sour Pitch to acidify the wort before boiling for a clean, controlled tartness.
Boil: Add Tettnang hops for light bittering.
Ferment: Ferment with ale yeast until clean and fully attenuated. Add optional fruit during fermentation for a fruit-forward character.
Enjoy: Ready to drink in about 4 weeks from brew day to glass.
This all-grain Florida Weisse delivers a tart, refreshing sour wheat beer with bright acidity and the flexibility to add your favorite fruit for a truly custom brew.
New to Liquid Yeast?
Liquid yeast can deliver excellent fermentation performance and a wider range of strain options, but it’s a living, perishable product that requires a little extra care.
Liquid yeast may arrive warm. Ice packs help reduce heat exposure but do not guarantee cold arrival.
Refrigerate it when received and plan to brew as soon as possible.
We recommend adding an insulated mailer + ice pack to liquid yeast orders.
During May–September, dry yeast is strongly recommended due to higher shipping temperatures.
Liquid yeast is final sale and cannot be replaced due to heat exposure during transit.
A tart, refreshing Florida Weisse with bright acidity, soft wheat character, and a light, crushable body. Expect a clean sour base that can be enjoyed on its own or enhanced with fruit additions like mango, guava, or kiwi for vibrant color and flavor. Brewed at low ABV, this beer stays crisp, balanced, and easy-drinking.
