A crisp, ultra-clean Japanese-style lager with delicate malt character and refreshing drinkability.

The Japanese Rice Lager 5 Gallon Beer Recipe Kit produces a pale straw-colored lager (approximately 2.6 SRM) with crystal clarity when properly lagered. Built on Pilsen Dry Malt Extract and rice syrup solids, this recipe delivers a light body and brilliantly clean finish.

Rice syrup solids boost fermentability and create a dry, crisp profile without thinning out flavor. Sorachi Ace hops provide gentle bitterness with bright lemon zest and subtle herbal notes, adding lift without overpowering the delicate malt base.

At approximately 5.4% ABV and 15 IBUs, this lager offers balanced smoothness and highly refreshing drinkability.

Brewing 5 gallons of Japanese Rice Lager follows a traditional lager process and rewards careful temperature control:

Brew: Boil with hop additions and dissolve rice syrup solids
Ferment: Pitch lager yeast and maintain cool fermentation temperatures (50–55°F)
Lager: Cold-condition to enhance clarity and crispness
Bottle or Keg & Enjoy: Ready in about 4–6 weeks

Proper lagering time enhances clarity, smoothness, and that signature dry finish.

Liquid yeast can deliver excellent fermentation performance and a wider range of strain options, but it’s a living, perishable product that requires a little extra care.

Liquid yeast may arrive warm. Ice packs help reduce heat exposure but do not guarantee cold arrival.
Refrigerate it when received and plan to brew as soon as possible.
We recommend adding an insulated mailer + ice pack to liquid yeast orders.
During May–September, dry yeast is strongly recommended due to higher shipping temperatures.
Liquid yeast is final sale and cannot be replaced due to heat exposure during transit.
