Lovibond
Lovibond refers to a scale used to measure the color of malt, wort, and beer. It's a visual method, comparing a sample to a series of colored glass discs or color charts. The scale is still widely used, especially for describing the color of malts, and is closely related to the Standard Reference Method (SRM) for measuring beer color.

Flavor Notes

White Wheat Malt provides a sweet, malty character with mild bread dough notes and subtle grain sweetness. Its flavor is soft and supportive, complementing yeast-driven and hop-forward profiles.

Mouthfeel Impact

Adds creamy body and significantly improves foam stability and head retention. The higher protein content contributes to a fuller texture and enhanced lacing.

Brewing Performance

  • Light straw color contribution (2.5°L)
  • Functions as a base malt at higher percentages
  • Enhances foam formation and stability
  • Adds body without heavy sweetness
  • Yield on grind approximately 83%

White Wheat Malt performs reliably in both traditional wheat styles and modern hop-forward recipes.

Best Used In:

  • Hefeweizen
  • American Wheat Beer
  • Belgian Witbier
  • Cream Ale
  • Kölsch

White Wheat Malt forms the backbone of many wheat beers and can also be used in smaller percentages to improve body and foam in a wide range of ale styles.

In All-Grain Brewing

Use 5% to improve head retention in any style. Use 10–20% in Kölsch and lighter ales for added body. Use 50% or more when brewing traditional or American wheat beers.

In Partial Mash Brewing

Include in the mash portion to contribute fermentable sugars and improve foam stability.

In Extract Brewing

White Wheat Malt must be mashed and cannot be steeped alone. It requires enzymatic conversion to extract fermentable sugars.
